Looking for something yummy and different for dinner tonight? How about Pork with a Cranberry Sauce glaze! What you don’t eat pork? Well fear not! This recipe is also amazing with Chicken Breast!

Pork with Cranberry Sauce Glaze:
(a gluten-free, dairy-free recipe)
Ingredients:
6 Boneless Pork Loin Chops or Boneless Chicken Breasts.
1/2 TSP Salt
1/2 TSP Pepper
2 TBSP Earth Balance Natural Buttery Spread (soy-free),
1 14 oz Can of Cranberry Sauce (I use the jellied type & tossed in some Craisens for fun! but you can use the whole-berry cranberry sauce)
1/3 Cup Grape Jelly
2 TBSP Heinz Ketchup
1 TBSP Tamari Soy Sauce, Wheat Free
1/3 Cup Pure Maple Syrup
Directions:
1. Heat a large skillet & add the butter. Salt & pepper the pork chops or chicken, then add to the pan to brown.
2. Once the meat has browned, remove from the pan and set aside. Keep warm!
3. In the same skillet, combine the Cranberry Sauce, Grape Jelly, Ketchup & Tamari Soy Sauce. Heat to cook, stirring to blend.
4. Once the sauce is well mixed, add back in the Pork or Chicken. Then drizzle on the pure maple syrup & bring the sauce to a boil.
5. Reduce the heat, cover and simmer for 15-20 mins until the meat is tender & cooked through!
Then serve & enjoy!
Notes:
* If you don’t use Heinz Ketchup, make sure to double check the label of the Ketchup you do use to ensure it’s Gluten-Free, many ketchup’s are not!
* If you don’t use Pure maple syrup, make sure to check the label of the one you uses, only pure maple syrup is naturally Gluten-Free!
* Wanna mix things up? Make the recipe with half chicken & half pork!
* Great to pair with steamed kale or broccoli for a veggie & rice or roasted potatoes! The sauce is great to dip in!
