Super Bowl Bake-Off! Beer Bread vs. Beer Bread!

So in honor of Super Bowl Sunday, I decided to whip up some Beer Bread! I found 2 great recipes online and lets see which is better!
Who will win the Super Bowl Bake-off?
(If I was cleaver, I would of used Sam Adams & Brooklyn Brewery Beer.)
Oh well!

First we have, Mom’s Classic Beer Bread!
Ingredients:
3 Cup Self-rising flour
3 TBSP sugar
12 Oz  Yards Brewery Brawler (or any beer of your liking) @ room temp.
1/2 Cup Melted butter

Directions:
1. Preheat oven to 350. Grease a 9x 5″ loaf pan with cooking spray.
2. Stir together the flour and sugar.
3. Add the beer and stir until combined.
4. Spoon into prepared loaf pan, and bake 1 hour.
5. Remove immediately from pan and place on a cooling rack over a cookie sheet.
6. Pour melted butter on top of the bread, letting it drip down the sides.

And in the other corner is Beer Bread!
Ingredients:
3 Cups bread flour
3 Tsp Baking powder
3/4 Tsp Salt
3/4 Tsp Baking soda
1/4 Cup Sugar
12 Oz Beer; any kind – I used Murphy’s Stout, on the idea of Guinness
1/2 Cup Butter; melted

Directions:
1. Preheat oven to 350 degrees. Grease on 8 X 5 inch loaf pan.
2. Place dry ingredients in a food-processor bowl or mixer and mix thoroughly (I used a hand mixer and it worked just fine).
Note: don’t over mix. Don’t mix out all the bubbles and the bread won’t rise!
3.  Add in the beer and mix until smooth.
4. Pour batter into the prepared loaf pan and top with melted butter.
5. Bake for 45 to 50 minutes.
Note: You may want to put some kind of pan or cookie sheet below the                            baking bread, because the butter tends to dribble out of the loaf pan.

I used beer I had, I chose a different beer to use per recipe. Rule of thumb, always use a beer you like the taste of to cook or bake with, if you won’t drink it, you won’t like to eat it! Due to the different flour uses they come out quite different looking! But they are both winners in my book!

Football on Saturday Night & Breakfast for Dinner!

I was hunkering down for an evening of football, when my belly began to grumble! Oh No! I’m not prepared for Saturday Night Football! Quick to the kitchen, we’ve only got minutes until kick-off! Well I have hard cider & flour, I know I’ll revamp my Beer Pancake recipe and make it gluten-free w/hard cider!

Getting crazy on a Saturday Night, Breakfast for Dinner!

Gluten-Free, Dairy-Free Blueberry Hard Cider Pancakes!
(A variation of Beer Pancakes!)

Ingredients:
1 Cup Bob’s Red Mill GF All Purpose Flour
1/4 Cup organic cane sugar (or if you prefer white sugar)
3/4 TSP Baking Powder
1/2 TSP Salt
1 Egg, Beaten
1 Cup Woodchucks Hard Cider (I used Pear, but you can use your favorite!)
2 TBSP Earth Balance Natural Buttery Spread (soy-free), Melted
Blueberries

Directions:
1. In a large bowl, mix together the dry ingredients: flour, sugar, baking powder and salt.

2. Next add in the wet ingredients one at a time, whisking as you go. First the beaten egg, then add in the Cider, and finally the melted butter. Keep stirring with the whisk until well combined (a few lumps remaining are ok).

3. Add in the desire amount of blueberries, or any other mix-in’s you care to, fold them in well with a wood spoon.

4. Heat Up the skillet/griddle/pan you wish to use. Should be a medium heat, not too hot or the pancakes won’t cook through or they will burn.

5. Lightly coat the skillet/griddle/pan with cooking spray and then drop about a 1/4 cup of batter onto the heated skillet/griddle/pan. Don’t spray the cooking spray too far ahead or it can turn brown.

6. Bubbles will appear on the top of the uncooked side and the edges will appear set, so time to flip and brown on the other side!

7. Once both sides are browned and cooked through, time to stack ‘em up and enjoy!

Notes:
* If you are not concerned w/ it being gluten-free, substitute the Woodchucks Hard Cider for your favorite Beer! I’ve made the recipe with regular all purpose flour & Yard’s Brewing Co. Brawler Ale, also very good!

* Have fun with flavor! Add in your favorite pancake mix’ins! But remember to make sure they compliment the flavor of the cider or beer you use. For the Woodchucks Pear Hard Cider i mixed in blueberries! Maybe pumpkin pancakes w/ pumpkin ale or mix strawberries in w/a chocolate ale! It’s up to you & your taste buds!
